CHOCOLATE ZUCCHINI CAKE
(baked in crock pot / slow cooker)
Cream together in large bowl:
1/3 c. margarine or butter
1 1/2 c. (or less) sugar
Add (one at a time):
2 eggs
Stir in:
2 squares (2 ounces) unsweetened chocolate, melted
1 1/4 tsp. vanilla extract (optional)
1 1/4 tsp. grated orange peel
1/3 c. soy milk
Fold together in medium bowl:
1 1/2 c. grated, drained zucchini
1 2/3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon.
Pour into greased & floured crock pot / slow cooker bake pan.
Put lid on bake pan.
Cover crock pot / slow cooker.
Cook on HIGH setting for 2 hours 30 minutes to 4 hours (until done).
Cool in pan on rack.

1/2 tsp. baking powder
6 tbsp. water
Stir in:
2 squares (2 ounces) unsweetened or semi-sweet chocolate, melted
1 1/4 tsp. grated orange peel
1/3 c. soy milk
Stir together, then add to cake batter:
1 1/2 c. grated, drained zucchini
1 2/3 c. whole wheat flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
